The oval boxes, when stacked, are reminiscent of Shaker boxes—historically made of bentwood and often painted with various earth pigments. The boxes were used to store dry food in pantries, as well as sewing and quilting supplies. 2. Each box is hand-built using English porcelain with variations of glazes. First, using stencils, slabs are cut out to pieces and the walls are built. Once the structure dries out to leather-hard, the walls are trimmed and smoothed out evenly and the rim for the bottom half gets built while the top is hollowed out to ensure the two pieces fit together nicely. 3. Madeleine plates, along with the boxes, are shaped using madeleine baking pans. They can be utilized as plates to store your jewelry, serve as incense holders, or hold other small precious objects. The flavors are; sweet potato cream for the purple, cardamom and milk oolong for the beige, pandan and coconut for the green.&nbsp; 6.The Monaka box shape is inspired by the japanese dessert monaka, made of thin wafers baked in molds, holding sweet red bean jam, ice cream, chestnut paste, etc. 7. starter scrapings 50g wholemeal rye flour 50g room temperature water Dough100g excited sourdough starter from above250g bread flour 200g all-purpose flour350g room temperature water8g salt Yields 1 loaf Day 1 - Feeding your starter The day before you want to make your dough, you’ll need to feed up your start scrapings. 1.&nbsp; &nbsp; Into your starter pot add 50g of room temperature water, and 50g of Wholemeal Rye flour and mix together well. Scrape down the edges to level off the mixture and mark on the side of the pot with a pen or elastic band where the mixture comes up to. 2.&nbsp; &nbsp; Leave this on your kitchen side at room temperature overnight or for 8-12 hours and it will bubble and increase in volume. If it’s been a while since you baked (two weeks or more) your starter might get a little sleepy in there and require a couple of feeds to get it excited again. 3.&nbsp; &nbsp; The following morning your starter should have produced gas and increased in volume. You’re good to go. Day 2 - Making your dough 1.&nbsp; &nbsp; Take 100g of your starter out of the pot and put in in a large bowl, put your scraping pot in the fridge for next time. Add the water flour and salt and mix it together into a dough with your dough scraper. Mix for a minute or so to make sure everything is combined. Let this mixture rest and soak for 30 minutes. First Fold 2.&nbsp; &nbsp; Spray the work surface with water, and the top of your dough. Turn the dough out onto the wet surface upside down. Work around the dough pinching a piece with your finger and thumb, stretching it out and folding it back over the dough making a ball. Around 12 folds should be enough. Roll the dough back over, smooth side up, return it to the bowl, spray the top with water, cover with a clean cloth and leave to rest for 2 hours at room temperature. Second Fold 3.&nbsp; &nbsp; After the dough has rested it should have puffed up slightly already. Spray the table and dough again with water. Turn the dough out and reshape into a ball. 6 stretches and folds should be enough this time, roll the dough over with the smooth side on top and tuck everything underneath with your hands. Return the dough to the bowl for a further 2 hours. Third Fold 4.&nbsp; &nbsp; After the dough has rested for this second time there should be clear signs of the dough rising, Stretch and fold the dough once more exactly like the last time, and return the dough to the bowl to rest for 1 hour. Pre-shape 5.&nbsp; &nbsp; This time after resting it’s time to pre-shape the dough. Dust your surface with flour, turn out your dough upside down onto the surface. If you have doubled the recipe to make two loaves, divide it into two at this point with the flat side of your dough scraper. Shape the dough into a ball really quite tight without tearing it. Rest on the side for 1 hour covered with a cloth.Final Shape 6.&nbsp; &nbsp; In the final shaping the aim is to create a tight structure without degassing the dough too much. So be delicate with the folds but still creating tension. Dust your work surface with a little flour, slide your dough scraper underneath and turn the dough upside down onto a lightly dusted surface. Let it relax into a circle. Pick up the side edges one by one, stretching out very slightly and folding over the dough, one over the top of the other. Roll the dough from the top edge towards you into a sausage and stick it onto the sticky patch closest to you, pinching the seam to stick in place. When you are done, dust it well with semolina or a wholemeal flour, and dust an oval banneton basket too. Place the dough in the basket upside down (seam side up). If you don’t have a basket, line a colander or bowl with a cloth and dust it well. Final Rest 7.&nbsp; &nbsp; At this stage rest your dough in the fridge uncovered to prove nice and slowly overnight. Day 3 - Baking your loaf 1.&nbsp; &nbsp; When you are ready to bake, remove your loaf from the fridge and let it rest on the kitchen side while the oven preheats. It should show clear signs of inflation, don’t expect huge growth but certainly it should have plumped up since you put it in the fridge. Preheat the oven to 230°C fan/456°F/gas mark 8 with a baking stone on the middle shelf and a deep tray on the bottom. Boil the kettle too. 2.&nbsp; &nbsp; Turn out the loaf out onto a floured peel, make a cut in the top with a grignette and slide it onto the baking stone. Add the water. Using a rubber spatula, mix until the liquid is absorbed and the ingredients form a sticky dough ball. Rub the surface of the dough lightly with olive oil. Cover the bowl with a damp tea towel, cloth bowl cover, or plastic wrap and place in the refrigerator immediately for at least 12 hours or for as long as three days. (See notes above if you need to skip the overnight rise for time purposes.) NOTE: It is important the dough really be slicked with olive oil especially if you are using a cloth bowl cover or tea towel as opposed to plastic wrap or a hard lid. If you are using a tea towel, consider securing it with a rubber band to make a more airtight cover. If you do not slick the dough with enough oil, you risk the dough drying out and forming a crust over the top layer. 2.&nbsp; &nbsp; Line two 8- or 9-inch pie plates or a 9×13-inch pan (see notes above) with parchment paper or grease with butter or coat with nonstick cooking spray. (Note: This greasing step may seem excessive, but with some pans, it is imperative to do so to prevent sticking. With my USA pans, I can get away with olive oil alone; with my glass baking dishes, butter is a must.) 3.&nbsp; &nbsp; Pour a tablespoon of oil into the center of each pan or 2 tablespoons of oil if using the 9×13-inch pan. Using two forks, deflate the dough by releasing it from the sides of the bowl and pulling it toward the center. Rotate the bowl in quarter turns as you deflate, turning the mass into a rough ball. Use the forks to split the dough into two equal pieces (or do not split if using the 9×13-inch pan). Place one piece into one of the prepared pans. Roll the dough ball in the oil to coat it all over, forming a rough ball. Repeat with the remaining piece. Let the dough balls rest for 3 to 4 hours depending on the temperature of your kitchen. 4.&nbsp; &nbsp; Set a rack in the middle of the oven and preheat it to 425°F. If using the rosemary, sprinkle it over the dough. Pour a tablespoon of oil over each round of dough (or two tablespoons if using a 9×13-inch pan).&nbsp; Rub your hands lightly in the oil to coat, then, using all of your fingers, press straight down to create deep dimples. If necessary, gently stretch the dough as you dimple to allow the dough to fill the pan. Knead on low speed for about 8 mins until a smooth dough forms. Roll the wrappers – 2.&nbsp; &nbsp; Divide the dough into 14 equal parts. Work on one piece at a time and make sure you cover the rest to prevent it from drying out. 3.&nbsp; &nbsp; With a rolling pin, flatten one piece into a disc-like wrapper, 9-10cm in diameter. Ideally, it should be thinner on the edge &amp; thicker in the middle&nbsp; Shape the baos – 4.&nbsp; &nbsp; Place a spoonful of filling (about 20g) in the middle of the wrapper and shape the bao. Rest the baos – 5.&nbsp; &nbsp; Repeat to finish all the wrappers and filling. Make the dough – 1.&nbsp; &nbsp; Combine ingredients for dough, and set aside 10 minutes Add butter pieces and mix dough, for 8-10 minutes Form the dough into a ball, and cut a “+” in the dough so that it can later be rolled into a square shape easier.&nbsp;Place in a mixing bowl and cover. Let rise at room temp until about 1.5x bigger, 45mins-1hour Chill the dough and prepare butter block – 2.&nbsp; &nbsp; Transfer the bowl to fridge and chill for at least 4 hours, up to 12 hours. Prepare the butter block by rolling it out into a flat 8” square, about&nbsp;½-inch-thick.Roll out dough – 3.&nbsp; &nbsp; After 4-12 hours, the dough should have doubled in size. Deflate the dough and stretch into a square no more than 8” on each side. Wrap the dough in a plastic wrap and roll out into a 8” square. Freeze for 20 mins. 1st Lamination – 4.&nbsp; &nbsp; Remove the butter block from the fridge and the dough from the freezer.&nbsp;Set aside the butter. Unwrap the dough (save the plastic, as you’ll use it again) and place on a lightly floured surface. 5.&nbsp; &nbsp; Roll out the dough until 16” long and 8” wide. Fold the butter in, there should be a block of butter with overhanging dough on two opposite sides and a thin border of dough along the other two.&nbsp;6.&nbsp; &nbsp; Grasp the overhanging dough on one side and bring it over the butter toward the center, then repeat with the other side of the dough, enclosing the butter. Pinch the dough together along all seams so that there’s no gap. 7.&nbsp; &nbsp; Rotate the enclosed block so the seam is oriented vertically. Lightly beat the dough along to lengthen and flatten, and roll out into a 24” long, 1/4” thick narrow slab. 8.&nbsp; &nbsp; Square off the edges as much as possible (trim any excess).9.&nbsp; &nbsp; Double Turn: Grab the short side of the rectangle and fold it toward midline of the slab, repeat with other side, leaving a 1/8” gap in between. 10.&nbsp; &nbsp; Fold the entire slab in half into a book. Beat the dough and roll out (same as before) into a long narrow 3/8” thick slab. 12. &nbsp;&nbsp; Simple Turn: Fold the dough in thirds like a letter,&nbsp;tripling the layers. Press gently so the layers adhere. Wrap and freeze for 15mins, then refrigerate for 1 hour. 13.&nbsp; &nbsp; After an hour, let the dough sit in room temp for ~5mins, unwrap and place on a lightly floured surface. 14.&nbsp; &nbsp; Beat the dough and roll out into 15x17” slab. Slide onto a baking sheet and freeze for 20mins, then refrigerate overnight for shaping and baking the next day.(Next morning)Divide and shape – 15.&nbsp; &nbsp; Line two rimmed baking sheets with parchment paper. Let the dough sit in room temp for ~5mins. Re-roll the dough out to 15x17 if necessary. 16.&nbsp; &nbsp; Trim any irregular edges, and cut into five 3.4x15” rectangles. For traditional croissants, slice the rectangles into triangles diagonally, making 10 triangles (fig.1), or divide the rectangles into 7.5x3.5” slabs&nbsp;(fig.2) for pain au chocolat or ham &amp; cheese croissants.
