Banana Bread

Ingredients

1½ cups all-purpose flour
1¼ teaspoons baking soda
¾ teaspoon kosher salt
1 cup (packed) dark brown sugar
⅓ cup mascarpone, plain whole-milk Greek yogurt, or sour cream
¼ cup (½ stick) unsalted butter, room temperature
2 large eggs
4 large very ripe bananas, mashed (about 1½ cups)
½ cup chopped bittersweet or semisweet chocolate
½ cup chopped walnuts

Makes one 8½x4½" loaf


Instructions

1.    Preheat oven to  350°F. Butter the loaf pan or line with parchment paper.

2.    Combine flour, baking soda and salt in a bowl.

3.    In a separate large bowl, beat together the brown sugar, yogurt and butter on med-hi speed, until light and fluffy.

4.    Add the eggs into the wet mixture, one at a time.

5.    Reduce the speed to low, and add in the flour mixture until combined.

6.    Add the mashed bananas and fold in the chocolate and walnuts.

7.    Pour the batter into the prepared pan, and bake for 1 hour.  Let cool before slicing.
